Harvest

Our first tomato harvest has been so successful! Considering it was our first time with a full blown veggie garden we are doing great! Most tomato & pepper plants I started from seed indoors at the end of February beginning of March to give me something to do while the snow was still on the ground. I have been canning tomatoes like crazy to store away till its time to make my tasty chili & pasta sauce this fall! 
Today I made SALSA! Who doesn't love delicious salsa with tomatoes right from your own garden?! 

1 1/2 cups fresh tomatoes or canned
1/4 red onion
1/2 yellow pepper
1 Tbs vinegar
1/2 tsp minced garlic 
1/2 of a lime juice  
1/4 tsp salt (I use kosher)
1 Tbs Agave (secret weapon) 
1/4 tsp black pepper
1 jalapeño (optional) take seeds out if you don't want too much heat!    
Handful of cilantro 

-Pulse in blender or food processor 
   (I use my handy dandy NINJA) 

Pulse until you like how it looks. Some may like it really blended others like it chunky! Do what you like best, you're the one eating it after all! 
 
This recipe is super simple & tasty! 
The fun thing about cooking is you can tweak it however you like & it still comes out awesome because YOU made it!
